Birthdays..Baby Showers..Buddhist Temples..Oh my!

we started out July with a bbq and fireworks for the 4th and then we celebrated Zuri's 1st birthday!!! She is the most adorable little girl with such a sassy little personality. She and Cohen are finally getting the age where they interact a little bit more... well actually Cohen just seems to watch her in awe of all the things she can do that he resists doing, like walking for instance! He's finally taking steps but he seems to  prefer crawling as his mode of getting around. Recently I got him some shoes for his 1st birthday which is coming up in a matter of weeks!!! yay!! anyway, when i attempted to put them on he didn't really know how to react to them. He stood there as if they weighed a million pounds and his feet were glued to the floor... the he burst into tears until i took them off! good thing there about 1 size too big so maybe when he fits them he actually wear them. He's still making his usual silly faces but he is getting to be quite the cuddle monster these days. Constantly wanting to be held and laying his head down on your shoulder, so sweet. He's also quite the flirt with strangers. just a few days ago at walmart he was slapping his hand on the counter to get the cashiers attention and when she reacted he would turn his head and snuggle it in my shoulder pretending to be shy. such a cutie. its pretty hilarious when i'm in line at the checkout or at church and holding cohen he'll make his silly faces and i can hear people behind me chuckling. he's a crack up! he's also learning to share (sort of) if he's eating and i say awwww with my mouth open he'll put it in my mouth. he has also been showing his frustration more too. if i take something away he reaches out for it with a stiff arm and clenches his fist. trying to say no to him is just a joke too... he thinks its a game and keeps touching whatever i tell him not to while laughing harder every time i say "no, no!" then i start laughing which totally defeats my  purpose of showing him my seriousness! oh what to do!
What else have we been up to... Our friends Alicia and Chantel are having babies in October so we all got together to throw them a baby shower! Gwen and I got busy making decorations and gifts for them! It turned out really cute! Everyone contributed yummy food and treats and we laughed and talked for hours. It was sooooo fun!
Gwen Payce Marcel and I went to a Thai kitchen! I think that's what you'd call it. It was at a Buddhist temple here in Tampa where they had lots of tables set up right by a river and they served a variety  of  Thai food for donations that would go towards their temple. It was delicious! Payce had us try these balls made out of coconut milk with green onion in  the middle! they were amazing!
We're having a great time here and seeing success which is very comforting considering the experiences we've had the last 2 summers so I'm feeling hopeful that we may have a backend this fall but we'll see!!! no matter how small it may be i'll be grateful for anything! I'm sad to think of leaving all of our friends that we've made here. I've gotten used to girls night every friday and watching the Bachelorette and always having someone nearby to do things with!! It will be a hard adjustment to go back to Utah... Ugh and trying to find a place to live and jobs! yikes! the transition back always takes so much faith. There are so many unknowns. Thats life i guess! We still have a little over a month left though so I plan on soaking it all in before we go home!!!!

Real Simple Lasagna

This post is for my Tampa Ladies... this is the lasagna I made for our recipe exchange!

1- 260z jar pasta sauce
1- 18oz bag frozen large cheese ravioli unthawed
1- 10oz box frozen spinach. thawed & squeeze dried
1- 8oz bag shredded mozzarella
1/2 cup grated parmesan cheese

Heat oven to 350. Spoon 1/3 of sauce into 9x13 dish. Place 12 ravioli on top. Cover with spinach & half mozzarella. Add another layer of ravioli & the remaining sauce, mozzarella & parmesan cheese. Cover with foil and bake. I have yet to find the right timing for this so i usually just keep checking on it. Atleast 30-40 minutes though. Remove the foil until cheese bubbles on top. Enjoy!

Lately he raises his eyebrows and opens his mouth like he's suprised or something! he loves to do it for a reaction. i love love love it!

He snuggles up to his lion when he sleeps. Sometimes he lays on it right under his belly. kinda funny and totally adorable.
